Strawberry Beet Coolers

Servings:
16 - 9 oz coolers
Per Serving:
180 cal., 1 g. fat, 11 g pro., 32 g carb., 0 g fiber, 150 mg sod.
Meal Pattern:
1 Other Carbohydrate; | 1 1/2 Skim Milk |
Beets, sliced, cooked and chilled | 2 3/4 cups |
Pineapple juice, unsweetened, chilled | 8 cups |
Low-fat strawberry yogurt* | 1 pouch |

- Add beets and 2 cups pineapple juice to a large capacity blender or food processor (prepare in batches as needed).
- Blend on high speed for 1 minute; stop blender and scrape sides.
- Continue blending until mixture is smooth; transfer to 2-gallon (or larger) container.
- Add yogurt and whisk until well-combined.
- Add remaining 6 cups pineapple juice and whisk until fully incorporated.
- Pour 9 oz into serving cups and cover; serve immediately or refrigerate/freeze** until serving.***
