Recipe: Roasted Onion and Garlic Mashed Potatoes
Serves: 12
2 cups White onion, 1/4-in. dice
1/4 cup Garlic, chopped
1 Tbsp. Olive oil
8 cups Potatoes, peeled, halved
8 cups Water
6 Tbsps. Butter
1/2 cup Sour cream
2 tsps. Salt
1/2 tsp. Black pepper
- Toss the onions, garlic and olive oil together in a place to combine. Place in an oven-proof baking dish, cover tightly with foil and place in a preheated 350°F oven. Bake for 45 minutes until tender, then remove from the oven and set aside.
- Place the potatoes and water in a large saucepan and bring to a boil over high heat. Reduce the heat to medium and cook for 20 to 30 minutes until tender. Drain well, but do not let cool.
- Place the potatoes, roasted onions, butter, sour cream, salt and pepper in a stainless steel bowl. Mash or whip until just fluffy and combined. Do not over-beat.
