Recipe: Roasted Onion and Garlic Mashed Potatoes

Mashed-PotatoesServes: 12

2 cups                White onion, 1/4-in. dice

1/4 cup               Garlic, chopped

1 Tbsp.               Olive oil

8 cups                Potatoes, peeled, halved

8 cups                Water

6 Tbsps.              Butter

1/2 cup               Sour cream

2 tsps.               Salt

1/2 tsp.              Black pepper


  1. Toss the onions, garlic and olive oil together in a place to combine. Place in an oven-proof baking dish, cover tightly with foil and place in a preheated 350°F oven. Bake for 45 minutes until tender, then remove from the oven and set aside.
  2. Place the potatoes and water in a large saucepan and bring to a boil over high heat. Reduce the heat to medium and cook for 20 to 30 minutes until tender. Drain well, but do not let cool.
  3. Place the potatoes, roasted onions, butter, sour cream, salt and pepper in a stainless steel bowl. Mash or whip until just fluffy and combined. Do not over-beat.
