1 pt. + 1 tbsp. + 1 tsp. chopped onions, raw
1 pt. + 1 tbsp. + 1 tsp. chopped peppers, sweet, green, raw

4 lbs. + 11 oz. liquid eggs, USDA 100046
2 tbsp. + ¼ tsp. ground spices, black pepper
2 tbsp. + ¼ tsp. salt
2 tbsp. + ¼ tsp. spices, paprika
¼c. + ½ tsp. oil, vegetable, 6/1gal, USDA 100439
3 qt. + ½ cup potatoes, diced, USDA 110844
1 lbs., 9 oz. shredded sharp cheddar cheese, Land O Lakes 41747
Instructions
- Preheat the AccuTemp Skillet to 350’F.
- Wash produce thoroughly. Dice peppers, onions and then set to the side.
- Dice turkey sausage. Hold to the side.
- In a large mixing bowl, whisk together liquid eggs, salt, pepper and paprika to the egg mixture and whisk to combine thoroughly.
- Cover the bottom of a full size steam table pan with plastic wrap. Add liquid eggs to pan and cook in AccuTemp Evolution Steamer for 20-25 minutes. Product must reach an internal temperature of 145 degrees for 15 seconds. Invert the pan into another solid pan, remove plastic – eggs will not stick to either pan this way.
- Lightly coat AccuTemp Skillet with oil.
- Add diced potatoes to skillet and cook until golden brown, stirring regularly. Add diced peppers and onions to skillet and saute for 3-5 minutes. Add diced turkey sausage and continue to cook for an additional 3-5 minutes. Product must reach an internal temperature of 160 degrees for 15 seconds.
- Add scrambled eggs and cheddar cheese to the skillet and mix well to incorporate all the ingredients. Cook for 3-5 minutes or until the cheese has melted completely. Product must reach an internal temperature of 160 degrees for 15 seconds.
- Transfer the scrambled eggs to the hotel pan, cover, and place in the hot holding cabinet until service. Serve ½ cup portion
- Garnish options: Chopped green onions, Pico de Gallo, parsley or cilantro.
