Objectives

  1. Identify recommended COVID-19 updates to current food safety plans based on the most common Standard Operating Procedures (SOPs) included in retail HACCP programs.
  2. Describe use of personal protection equipment in the era of COVID-19, including face coverings and face shields.
  3. Identify employee health screenings and prepare for illness among employees.
  4. Review safe handling of Time/Temperature Control for Safety (TCS) Foods.
  5. Define cleaning, sanitizing, and disinfecting non-food and food contact surfaces.
