Ingredients
1 lb. ground turkey, lean
1 cup onion, chopped
1 jalapeño, seeded, chopped
3 garlic cloves, minced
1 can white beans, drained and rinsed, 14-15 oz.
1 can hominy, drained and rinsed, 15 oz.
2 tsp. chili powder
1 tsp. cinnamon
1 tsp. oregano
14.5 oz. vegetable broth
2 cups water
Cooking spray
Instructions
- Spray a stockpot with cooking spray and brown the turkey with onions and jalapeño.
- Drain and rinse the ground turkey mixture and return to the stock pot.
- Add garlic cloves, white beans, hominy, chili powder, cinnamon, oregano, vegetable broth and water. Bring to a boil, then cover and simmer for 20 minutes.

*Notes: Scallions, lime wedges, light sour cream or reduced-fat cheese can be used as optional garnishes.
