Ingredients
2 1/2 lb. roasted sweet potatoes*
2 1/2 lb. roasted corn and black bean blend*
15 lb. macaroni and cheese, whole grain, reduced fat, prepared
5 lb. chicken taco meat, prepared
Instructions
- Prepare sweet potatoes and roasted corn and black bean blend according to package instructions. Reserve warm. Blend sweet potatoes, macaroni and cheese and taco meat together.
- For each serving, portion 10 oz. of macaroni and cheese blend into serving container. Top with 1/3 cup of the roasted corn and black bean blend.
