Ingredients

12 1/2 cups sweet potatoes, roasted*
6 1/2 cups black beans
25 corn tortillas, soft or crispy, flat
12 1/2 cups eggs, scrambled
6 1/4 cups cheddar cheese, mild, shredded
6 1/4 cups salsa

Instructions

  1. Prepare sweet potatoes and black beans according to package instructions. Reserve hot.
  2. For each serving; place corn tortilla in serving container and top with 1/4 cup black beans and 1/2 cup sweet potatoes. Finish with 1/2 cup of scrambled eggs and 1/4 cup cheese. Serve with 1/4 cup of salsa.
