Ingredients

1 lb. 93% lean ground beef
1 cup long-grain white rice, uncooked
1 cup chopped onion
3 cups beef broth, divided
1/4 cup ketchup
2 tsp. Worcestershire sauce
2 oz. reduced-fat or regular cream cheese, cut into small pieces
1/2 tsp. yellow mustard
1/4 tsp. salt or to taste
1/4 tsp. black pepper or to taste
8 oz. (2 cups) shredded reduced-fat or regular sharp cheddar cheese, divided

Instructions

  1. Place a large skillet over medium-high heat, add beef and cook until brown, about 4-5 minutes, stirring occasionally.
  2. Add the rice, onion, 2 cups of the broth, ketchup and Worcestershire sauce to the browned beef in skillet. Stir until well blended. Bring to a boil, reduce heat, cover and simmer 15 minutes or until liquid is absorbed.
  3. Remove from heat, stir in the remaining 1 cup broth, cream cheese, mustard, salt, black pepper and all but 1/2 cup of the cheddar cheese. Stir until cheese melts. Sprinkle with the remaining cheese.
