Let’s Talk: How to Properly Document Meal Pattern Requirements for Child Nutrition (CN) Programs
This USDA session is designed to help food manufacturers navigate the CN Labeling process and prepare an acceptable Product Formulation Statement (PFS). Come learn the ABCs on how to become an authorized CN Label vendor: practice preparing a CN Labeling application (FSIS Form 7234-1) and gain a better understanding of the QC approval process and what to expect during a verification service. This session will also provide a step-by-step walk through on how to prepare a manufacturer’s PFS for: meat/meat alternates, grain-based and multiple component food items. Participants will be able to explain the purpose of a PFS, why it is important to CN program operators, and identify the five key components that must be included on a PFS to make it acceptable.

In this limited seating offering, SNA will pilot its brand new training course, What Should You Do? Ethical Decision Making in School Nutrition. This session, based off of the course, will feature an introduction to ethics along with a sampling of case studies in school nutrition relevant to all levels of staff. Be the first to experience this brand new material that you can take back to your district or state agency.

USDA Foods Taste Test
This cutting-edge program will be held at a high school in the Orange County (Fla.) Public Schools district, and will feature a tour of a newly remodeled cafeteria and kitchen with tons of innovative features built right in. Join us for a taste test using USDA foods in creative, unique, and fun ways that will show you how to create and customize recipes with USDA foods that will wow your students and increase participation. Attendees will be able to rate the recipes the same way students rate new recipe ideas in the district, as well as experience presentations from both USDA Foods and Orange County Public Schools on how they are embracing innovation. And did we mention the district’s food truck will be there?!Transportation to and from the site will be provided (buses leave the hotel at 12:15 pm). Registration for the event will be available after purchasing a full conference registration. The program will be free of charge, but please note that space is limited and is on a first come, first serve basis. The session is designed for school nutrition directors.
