The article titled “Cafeteria Staff Perceptions of the New USDA School Meal Standards” by Brenda Alcaraz, BS and Karen Weber Cullen, DrPH, RD compares different cafeteria staff perceptions about the new school food standards, how student participation rates were influenced by these regulations, and how staff could effectively influence a student’s dietary patterns in accordance with the new standards.
