2020-07-27

SNF-PBIC-operation-collage image School Nutrition Foundation is pleased to announce our new Operations & Equipment Guide! Originally designed to assist school nutrition operators plan equipment purchases to implement breakfast in the classroom, this guide is perfect for both school nutrition professionals and industry partners planning for all back-to-school service scenarios in SY 2020-21.

As one of the Partners for Breakfast in the Classroom—along with Food Research & Action Center (FRAC) and the NEA Foundation—SNF has translated ten years of experience planning, implementing, and supporting “Breakfast After the Bell” programs into this intuitive equipment guide. Each section is designed to help you assess and plan equipment purchases for mobile or grab-n-go meal service:

  • Food Delivery Systems helps operators choose the types of equipment needed depending on delivery model—direct delivery, grab-and-go, or a hybrid model.
  • Food Production Systems will walk operators through storage, cooking, and holding equipment needs.
  • Custodial, Cleaning & Sanitation/PPE (NEW!) is designed for assessing cleaning & sanitation equipment for the custodial staff, and now includes a section on personal protective equipment (PPE).
  • Meal Counts addresses equipment needs for proper counting & claiming for accurate record keeping.
  • Menus & Marketing provides information on menu planning, and marketing ideas to improve student engagement.

This guide will help operators identify a school or district’s needs in the areas of food production, meal delivery, meal counting & claiming, cleaning and sanitation, and menu planning, and think critically about how to serve school meals this coming school year. The guide will also help operators to be more nimble and pivot more quickly to a new food service model or solution.
