SN Digital Extra: Culinary Creativity During COVID-19 2020-05-13 In the first few weeks of emergency feeding efforts, school nutrition operators were faced with some unforeseen challenges; including refrigeration, social distancing, marketing, and storage. The answers to these unexpected obstacles were the subject of the article “Creativity in the Time of COVID-19” published in the May print edition of School Nutrition. As efforts continued during pandemic closures, school nutrition operations exercised culinary wizardry that involved scratch-made meals, farm-to-school partnerships, culinary education opportunities and much more. In this digital companion piece to the first article, “Food, Fun and Creativity in the Time of COVID-19” looks at these unique solutions. School Nutrition thanks General Mills Convenience & Foodservice for their generous support in making this article available. This is the third in an ongoing series of digital supplements produced by School Nutrition. The first looked at safety measures implemented at feeding sites while the second celebrated how communities have rallied together. The digital supplements are part of the magazine’s missions to continue relevant coverage pertaining to the COVID-19 crisis in between print editions of the magazine. Each month, additional content will be posted, so state tuned for the next supplemental article later this month. Read the Article
