The Journal of Child Nutrition & Management

Meeting the unique dietary needs of a child is a challenge present in all cafeterias across the country. Often, a student’s special diet is because of a food allergy, a food sensitivity, or a religious or ethical concern. As more research is conducted on these topics, and as more students request dietary accommodations, now more than ever is when school nutrition professionals need accurate and up-to-date resources.

The Fall 2019 edition of the Journal of Child Nutrition & Management delves deep into the complex topic of special diets with research-based and thought-provoking articles to support those in school foodservice.

Articles include a training review on the role of food sensitivities to meet the needs of students with intolerances and other concerns; research about resources to provide texture-modified diets for special needs children with developmental disorders and on perceptions of menu planners of costs in making meal accommodations; and a behind-the-scenes look at a Washington D.C. school that introduced vegan entrees as part of their lunch menus.

All that and more can be found in the Fall 2019 edition of the Journal of Child Nutrition & Management!
