Behind the Scenes at the Renaissance Esmeralda Resort Kitchen & Dining
Join executive Chef Eric Theiss of the Renaissance Esmeralda Resort as he takes you on a one-of-a kind culinary journey. You will tour the Renaissance banquet kitchen and gain innovative ideas for your school district from their state-of-the-art ovens, storage facility, garde-manger and conveyer belt food assembly to mock-up plating while sampling delightful food. Expect to stand or walk around for the duration of the class. Please wear comfortable, closed-toe shoes and have long hair tied back.
Fee: $25 per person to help offset cost of food tasting
CEUs: 1

Local Food Bank Activity: Help End Hunger in the Coachella Valley
When you think of Coachella, do you think of the popular and glamorous music festival? You can make a difference by participating in a less visible but critical side to Coachella: helping end hunger in the community. At SNIC, experience a unique opportunity to visit the “Find Food Bank” in the Coachella Valley, a non-profit organization dedicated to ending childhood hunger and family food insecurity in the Southern California region. Tour the food distribution center to learn about their emergency food distribution service and community partnerships:

  • Participate in a community service activity with other school nutrition professionals
  • Check out the food trucks that deliver nutritious food—to children in high-need and low-resourced communities
  • Hear the local school nutrition director’s perspective

Come learn and meet peers from across the country–all while helping the local community! Expect to stand for the duration of the class. Please wear comfortable, closed-toe shoes and have long hair tied back.
Fee: $25 per person to help offset bus transport costs and support Find Food Bank
