Latest Journal Issue Highlights Implementation of Food Safety Programs

Roberts, PhD; Kevin Sauer, PhD, RD; Jeannie Sneed, PhD, RD; Junehee Kwon, PhD, RD; David Olds, PhD; Kerri Cole; and Carol Shanklin, PhD, RD showcases a study conducted to determine how school districts have implemented food safety programs based on HACCP principles. The goals of the study were to evaluate how schools are implementing components of food safety programs and to determine school nutrition employees’ food-handling practices related to food safety.
