Celebrating a Holiday? Look to Parfaits

As Cecily Walters writes in “Parfait Perfection” in the May 2014 issue of School Nutrition, “The opportunity to blend nutritious fruit, lowfat yogurt and a whole-grain crunch in keeping with federal nutrition standards makes the parfait a natural addition to school menus.” If contemplating the idea of offering parfaits or expanding on your current parfait selections leaves you thinking that parfaits would be a great item to serve as part of holiday celebrations in your operation, you’re right!

Monica Coulter, corporate chef for General Mills Convenience & Foodservice, encourages school nutrition operators to get creative and have some fun with parfaits. She offers the following suggestions as a jumping-off point for your own brainstorming:

  • Groundhog Day: Top a parfait with a cereal mix that you can call Groundhog Chow. “Part of the fun is getting silly with the names!” asserts Coulter.
  • Valentine’s Day: Whip up parfaits featuring strawberries and strawberry yogurt.
  • St. Patrick’s Day: Stir powdered lime gelatin mix into vanilla yogurt and layer with canned pears (which can be left plain or turned green, too).
  • Memorial Day, Flag Day, Fourth of July or Veterans Day: Combine strawberries and blueberries with vanilla yogurt to play up your patriotism!
  • Fall or Halloween: Mix canned pumpkin with yogurt and a little brown sugar and pumpkin pie spice, then layer with apples.
