SNIC 2017 Kicks Off, Innovation Underway!


SNA's 2017 School Nutrition Industry Conference (SNIC) Kicks Off

School Nutrition Industry Conference (SNIC) has kicked off in sunny Orlando, Florida! Over 560 attendees have come together to learn how to implement creative solutions and foster imagination and innovation in the workplace.

On Saturday, January 22nd, SNA and USDA Food and Nutrition Services partnered up to offer SNIC conference attendees a special Bonus Session utilizing USDA Foods. Held at Cyprus Creek High School, part of Orange County (Fla.) Public Schools (OCPS), attendees experienced a day filled with fun and exciting topics in the school foodservice industry.

The goal of the workshop was to highlight creative ways that products offered by USDA Foods can be incorporated into mouth-watering recipes and dishes that appeal to students who are becoming known as “Generation Foodie.” Attendees began the day with USDA representatives Julie Skolmowski and Christina Riley, hearing about the latest trends and unique ways the Department of Agriculture is helping school nutrition programs with the R&D process for adding items to the Available Foods List, as well as its effort to provide maximum versatility to operators.

Attendees then sampled 6 recipes developed by Chef Paula Kendrick of the Florida Department of Agriculture. The recipes included Broccoli Mushroom Penne, Cinnamon Nachos with Apples and Pears, a Pork Bahn Mi Sandwich, Spicy Garbanzo Beans and a salad with Maple Glazed Chicken. After the tasting session, everyone had the chance to rate each one based on 16 different criteria and choose their favorites.

The second part of the Bonus Session included a presentation by the OCPS team, which included an in-depth tour of the recently renovated kitchen and cafeteria, along with a look at the district's food truck. In addition, a new golf cart for mobile delivery was shown.
