School Chefs: Boost Your Culinary Prowess at ANC!

Sure, you can talk about how to elevate your school nutrition program to the next level with colorful, nutritious and enviable meals, but actions speak louder than words.

At this year’s Annual National Conference (ANC) in Las Vegas, there will be many opportunities to see cooking skills live in action, giving you great ideas to bring back to your own schools. In the culinary demonstrations, you’ll be able to see recipes created right before your eyes, and then be better equipped to put these tips in action in your own district. Much of the chef-related ANC training is planned to help school chefs enhance their culinary skills and help them create craveable school meals that meet strict school nutrition standards.

New this year is the Culinary Skills Lab featuring Chefs from SNA’s Chefs Task Force. Instructors will provide four mini demonstrations—fruit and veggie prep, thermometer calibration, knife skills and weights and measures.

School chefs are also encouraged to get together and attend morning meetup events in the open space area on Tuesday, July 10 at 8:00 am and Wednesday, July 11 at 8:00 am. They can pick up a special Chef ribbon to identify themselves as school chefs, from the ANC Ribbon Wall.

In addition to the Culinary Skills Lab, there are also a host of education sessions perfect for chefs and school nutrition foodies alike. Throughout the week, there are sessions on fruits and veggies, easy from-scratch recipes, the school bakery, menu trends and many more. There is also a can’t-miss session featuring former cafeteria manager turned Food Network star Jason Smith.
