Minneapolis Public Schools’ UnBEETable Hummus Recipe
Ingredients
3 cups Garbanzo Beans/chickpeas
1 cup Beets, peeled and diced
½ cup Olive oil
½ cup Tahini
½ cup Lemon juice
¼ cup Garlic
1 Tbsp Ground cumin
½ cup Water
Salt and white pepper to taste
Directions
- Peel the beets, diced into half-inch cubes and cook at a slow boil until tender. Drain and rinse with cool water.
- Combine all ingredients (except the water) in a food processor. Puree until smooth; adding water as needed.
