Fun With Finger Salads

In School Nutrition’s August 2014 issue, author Dayle Hayes, MS, RD, offered an overview of peppers, including suggested ways to menu this popular produce item in school meals (“Pick a Pepper”). One potential way to introduce children to peppers is to experiment with finger salads (aka vegetable cups). You can add a little dip as appropriate and pair peppers with a familiar veggie like baby carrots or broccoli.
